But we've stayed in a beautiful hotel which has been converted from an old wooden Thai-style house right in the centre of the city. It's run by the loveliest woman called Florence and her cute little terrier puppy Daniel is always running around the foyer. It's impossible to enter or leave the hotel without playing with him for half an hour or so! If anybody is coming to Chiang Mai you have to stay here (before you do the elephant thing), it's called Boonmee Mansion Guesthouse, 6/1 Kotchasarn Rd, Phone (053) 208 200.

Then it was time for the all day cooking course! Oh my goodness, so much fun. After a great tour of the local markets where our man Perm explained all the weird and wacky ingredients, he took us out to his place in the country where we all donned aprons and cooked up a storm.

Perm was hilarious, doling out constant corny jokes without a break (I think I was the only one laughing uproarously at first, I love corn, but eventually it grew on everybody) and a hell of a cook. Under his supervision we dished up some amazing creations - Tom Yum soup, Penang Curry, Green Curry, Pad Thai, Papaya salad and Mango and sticky rice.

The best part however was what Perm called "Cooking with adventure"

that food looks tasty. i assume you made a decent dent in all those dishes?
jac and i wanted to take a cooking course while we were in bangkok but we ran out of time. so instead we just bought a cookbook, went to a local grocery and wung it (that's past tense for wing it). there was no open flame and the corny jokes were all ours... but it was delicious nonetheless. mmm. yeah. your photos are making me hun-gry.
